Instructions
- Heat your oven to 400°F and spray a baking dish with nonstick coating so the chicken doesn’t stick during cooking.
- Whisk together 3 tablespoons of olive oil, 1/2 cup of lemon juice, 4 minced garlic cloves, 2 teaspoons of dried oregano, salt, and pepper in a bowl until everything blends together.
- Place your 1.5 pounds of boneless, skinless chicken breasts into a resealable bag or shallow dish and pour the entire marinade over them.
- Seal the bag or cover the dish tightly and let the chicken sit in your refrigerator for at least 30 minutes so the flavors can soak in.
- Remove the chicken from the refrigerator and transfer it along with all the marinade to your prepared baking dish.
- Slide the dish into the preheated 400°F oven and bake for 25 to 30 minutes until the thickest part of each breast reaches an internal temperature of 165°F when you check it with a meat thermometer.
- Take the baking dish out of the oven and carefully spoon the pan juices over each piece of chicken on your serving plates, making sure every portion gets some of that flavorful sauce.
Notes
- Marinate your chicken for at least 30 minutes, but overnight in the refrigerator gives the flavors time to really sink in and makes the meat more tender.
- Check that your chicken reaches 165°F internally at the thickest part to ensure it’s cooked safely without drying out.
- If you follow a dairy-free diet, skip the feta and garnish with extra fresh parsley and a squeeze of lemon instead for brightness.
