Instructions
- Slice your 8 oz of mushrooms into thin pieces, mince 4 cloves of garlic, and chop your 4 cups of Swiss chard into bite-sized pieces.
- Pour 2 tbsp of olive oil into a large skillet and get it heating over medium-high heat until it shimmers around your chicken breasts.
- Pat your 4 chicken breasts dry, sprinkle them with salt and pepper on both sides, then lay them in the hot skillet and sear for 6 to 7 minutes on the first side until the surface turns golden.
- Flip your chicken and cook the other side for another 6 to 7 minutes, checking that the internal temperature reaches 165°F with a meat thermometer before you transfer the pieces to a plate.
- Add a touch more of the 2 tbsp olive oil to your skillet if it looks dry, then toss in your sliced mushrooms and minced garlic, letting them cook for about 5 minutes while you stir occasionally until they brown nicely.
- Pour in your 1 cup of heavy cream and 1 cup of chicken broth, stirring everything together and letting the mixture bubble gently for 5 to 10 minutes until it thickens up.
- Use an immersion blender to puree your mushroom sauce right in the skillet until it reaches a smooth consistency.
- Add your chopped Swiss chard to the skillet and cook it for 3 to 4 minutes, stirring gently until the leaves soften and wilt down, then taste and adjust the salt and pepper.
- Place your cooked chicken on serving plates, spoon the mushroom puree over and around it, and top with the wilted Swiss chard.

- Sear your chicken over medium-high heat for the full 6-7 minutes per side so the exterior gets golden and creates flavor, even if the center looks done earlier.
- When blending the mushroom sauce, start with the immersion blender on low speed to avoid splashing hot cream everywhere, then increase speed once it’s mostly combined.
- For a lighter version, swap the heavy cream with Greek yogurt or crème fraîche added after you remove the pan from heat so it doesn’t curdle.
- Swiss chard releases a lot of water as it cooks, so use a slotted spoon when transferring it to your plate to keep the mushroom purée from getting watery.
