Ingredients
Scale
Protein:
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
Seasonings and Flavorings:
- 2 tablespoons olive oil
- 1 packet (1 ounce) ranch seasoning mix
- 1 tablespoon garlic powder
- 1/4 teaspoon black pepper
Cheese:
- 1/2 cup grated Parmesan cheese
Instructions
- In a large bowl, combine 2 tbsp of olive oil, 1 oz of ranch seasoning mix, 1 tbsp of garlic powder, 1/2 cup of grated Parmesan cheese, and 1/4 tsp of black pepper until you have a thick paste.
- Add your 1.5 lbs of cubed chicken to the bowl and toss everything together until each piece gets thoroughly coated with the mixture.
- Thread the coated chicken pieces onto your skewers, keeping some space between each cube so heat can reach all sides.
- Heat your grill to medium-high (around 400°F) and lightly oil the grates where your skewers will sit.
- Place the skewers on the grill and cook them for 10-12 minutes at 400°F, flipping every few minutes to get even browning on all sides.
- Check that your chicken has reached an internal temperature of 165°F with a meat thermometer before removing it from the heat.
- Let the skewers rest on a plate for 3-5 minutes so the juices settle back into the meat before serving.
Notes
- Pat your chicken dry before cubing it, as moisture prevents the ranch-parmesan coating from sticking properly and helps you get better grill marks.
- Leave space between chicken pieces on each skewer so heat circulates evenly and everything cooks through at the same rate rather than having some pieces overdone while others stay undercooked.
- If using wooden skewers, soak them in water for at least 30 minutes before threading the chicken to keep them from charring on the grill.
- For a dairy-free version, replace the Parmesan with nutritional yeast and use a homemade ranch seasoning blend with dried herbs, garlic powder, and onion powder instead of packaged mix.
