Ingredients
Scale
Proteins and Base:
- 1 lb chicken breast
- 2 tablespoons olive oil
Liquids and Dairy:
- 1 cup cream
- 1 cup chicken broth
- 1 cup sliced pepperoncini peppers
Seasonings:
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt to taste
- pepper to taste
Instructions
- Pour 2 tbsp of olive oil into your skillet and let it heat over medium heat for about 2 minutes until it shimmers.
- Take your 1 lb chicken breast and rub it all over with salt, pepper, 1 tsp garlic powder, and 1 tsp onion powder.
- Place the seasoned chicken into your hot skillet and let it cook for 5-7 minutes at medium heat until the bottom turns golden brown, then flip it over.
- Cook the other side for another 5-7 minutes at medium heat until it’s golden brown, then transfer the chicken to a plate.
- Pour 1 cup of chicken broth directly into your skillet with the pan still on medium heat and let it come to a simmer for about 2 minutes.
- Stir in 1 cup of cream and 1 cup of sliced pepperoncini peppers, mixing everything together over medium heat for 1 minute.
- Nestle your chicken back into the skillet and cover it with a lid.
- Reduce your heat to medium-low and let everything cook covered for 15 minutes.
- Uncover your skillet and plate the chicken with the creamy sauce spooned over the top while it’s still hot.
Notes
- Pound your chicken breasts to an even thickness before cooking so they cook through at the same rate and stay juicy throughout.
- If your sauce seems too thin after cooking, remove the chicken and simmer the cream mixture for a few minutes to thicken it up before returning the chicken to the skillet.
- For a lighter version, replace the heavy cream with Greek yogurt or sour cream stirred in at the end, though add it off the heat to prevent curdling.
- Pepperoncini peppers vary in heat level depending on the brand, so taste the sauce as you go and add more peppers or their brine if you prefer extra tang and spice.
