Salad Base:

  • 1 head of romaine lettuce, leaves separated and washed
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup cherry tomatoes, halved

Dressing and Toppings:

  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1 cup garlic croutons

Seasoning and Garnish:

  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon fresh parsley for garnish

Instructions

  1. Take your 2 cups of cooked chicken breast and tear it into bite-sized pieces with your fingers or two forks.
  2. Rinse your romaine lettuce head under cold water and pat each leaf dry with paper towels, then pick out the largest leaves for your base.
  3. Lay out your largest romaine leaves on a clean surface and place about 1 tablespoon of shredded chicken onto the center of each leaf.
  4. Drizzle 1/2 teaspoon of Caesar dressing over the chicken on your leaf.
  5. Sprinkle 1/2 teaspoon of grated Parmesan cheese directly onto each bite.
  6. Top your Caesar-dressed chicken with one garlic crouton, pressing it gently so it sticks.
  7. Position one halved cherry tomato on top of your crouton and season the whole bite with a pinch of salt and pepper.
  8. Arrange all your finished bites on your serving platter and scatter fresh parsley over the top if you’d like that green touch.

Notes

  • Pat your chicken completely dry before shredding so the meat holds together better and the Caesar dressing sticks instead of sliding off.
  • Choose the innermost romaine leaves since they’re more tender and hold up better when you bite into them without falling apart.
