Description

Nothing beats how mississippi chicken brings that tangy, salty goodness to your dinner table with just chicken, peppers, and a simple sauce that does all the heavy lifting. This one-pan dish works great when you need something that tastes like you spent hours cooking but actually comes together in about thirty minutes.

Ingredients

Scale

Protein:

  • 3 boneless, skinless chicken breasts

Flavorings and Seasonings:

  • 2 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • Salt and pepper to taste

Dairy:

  • 1 cup heavy cream

Instructions

  1. Get your oven heating to 400°F (200°C) and give a baking dish a light spray of cooking oil.
  2. Pat your 3 to 4 boneless, skinless chicken breasts dry, then sprinkle both sides generously with salt and pepper.
  3. Whisk together 1/4 cup of low-sodium soy sauce, 1 cup of heavy cream, and 2 minced garlic cloves in a bowl until the mixture turns smooth.
  4. Lay your seasoned chicken breasts flat in the prepared baking dish.
  5. Pour the cream sauce evenly over each piece of chicken, making sure everything gets coated.
  6. Slide the dish into your preheated oven and bake for 25 to 30 minutes until a meat thermometer reads 165°F (74°C) at the thickest part.
  7. Take the dish out of the oven and let it rest for a few minutes before plating.
  8. Spoon the remaining sauce from the bottom of the dish over your chicken as you serve it.

Notes

  • Pound your chicken breasts to an even thickness before baking so they cook uniformly and stay moist throughout.
  • The soy sauce and cream combination creates a rich sauce, so resist the urge to add more liquid or the flavors become diluted.
  • Check the internal temperature with a meat thermometer at 25 minutes since oven temperatures vary, and undercooked chicken isn’t safe to eat.
  • For a lighter version, substitute Greek yogurt or sour cream for the heavy cream without changing the baking time or temperature.
