Ingredients
Scale
Protein and Vegetables:
- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
Sauce and Seasonings:
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 0.5 cup grated Parmesan cheese
- salt to taste
- pepper to taste
Instructions
- Get your grill heating to 375°F on medium-high so it’s ready when your chicken is.
- Pat 2 boneless, skinless chicken breasts dry, then coat both sides with 2 tablespoons of olive oil and sprinkle your salt and pepper across the surface.
- Place the chicken directly on your grill grates and cook for 6 to 7 minutes on the first side without moving it around.
- Flip each breast over and let it cook another 6 to 7 minutes until the internal temperature reaches 165°F.
- While your chicken cooks, warm 2 tablespoons of olive oil in a saucepan over medium heat, about 325°F.
- Add 4 minced garlic cloves to the hot oil and let them become fragrant, roughly 1 minute of stirring.
- Pour in 1 cup of heavy cream slowly while stirring to blend it with the garlic and oil.
- Let the cream mixture simmer gently at around 180°F for 2 minutes until it thickens slightly.
- Remove the pan from heat and stir in 1/2 cup of grated Parmesan cheese until you see a smooth, cohesive sauce.
- Steam your 2 cups of broccoli florets in a covered pot with about 1/4 inch of water at 212°F for 5 minutes until the florets turn tender.
- Arrange the grilled chicken on your plate, spoon the creamy garlic sauce generously over top, and nestle the steamed broccoli alongside everything.
Notes
- Pound your chicken breasts to an even thickness so they cook uniformly and don’t dry out on the outside while the center finishes cooking.
- Watch the garlic closely when sautéing since it burns quickly and bitter garlic can ruin the entire sauce—keep the heat at medium and stir constantly.
- Test the chicken with a meat thermometer to reach 165°F internally, which guarantees it’s cooked through without overcooking the exterior.
- For a lighter version, swap the heavy cream with Greek yogurt or a mixture of chicken broth and cornstarch to thicken the sauce instead.
