Ingredients
Scale
Proteins:
- 1 pound boneless, skinless chicken breast
- 2 large eggs
Base and Aromatics:
- 6 cups chicken broth
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
Grains and Seasonings:
- 1 cup long-grain rice
- 1/4 cup fresh lemon juice
- 1/4 cup fresh dill, chopped
- salt and pepper to taste
Instructions
- Heat 2 tablespoons of olive oil in your large pot over medium heat for about 1 minute, then add your finely chopped onion and cook it for 5-7 minutes until it turns translucent.
- Stir in 3 minced garlic cloves and let them cook for 1 minute until fragrant.
- Place your 1 lb boneless, skinless chicken breast into the pot and pour in 6 cups of chicken broth.
- Bring everything to a boil over medium-high heat, then lower your temperature to medium and simmer for 20 minutes until your chicken is fully cooked through.
- Remove the chicken from your pot and shred it with two forks, then return it to the pot.
- Add 1 cup of long-grain rice to your pot and stir it well, then simmer over medium heat for 15-20 minutes until your rice becomes tender.
- Pour in 1/4 cup of fresh lemon juice from about 2 lemons and add 1/4 cup of chopped fresh dill to your soup.
- Taste your soup and season it with salt and pepper as needed, then let it simmer for 2-3 minutes more on medium heat so the flavors blend together.
- Ladle your soup into bowls and top each serving with extra fresh dill before bringing it to your table.
Notes
- Cook your chicken breasts whole so they stay moist and tender, then shred them easily with two forks once they’re done.
- Add the lemon juice at the end rather than during cooking, as this keeps the bright citrus flavor from fading into the broth.
- Stir the rice frequently while it simmers so it doesn’t stick to the bottom of the pot and distributes evenly throughout your soup.
- For a lighter version that works with most diets, use vegetable broth instead of chicken broth and swap the chicken for white beans or extra vegetables like zucchini and spinach.
