Instructions

  1. Heat 2 tablespoons of olive oil in your large pot over medium heat for about 1 minute, then add your finely chopped onion and cook it for 5-7 minutes until it turns translucent.
  2. Stir in 3 minced garlic cloves and let them cook for 1 minute until fragrant.
  3. Place your 1 lb boneless, skinless chicken breast into the pot and pour in 6 cups of chicken broth.
  4. Bring everything to a boil over medium-high heat, then lower your temperature to medium and simmer for 20 minutes until your chicken is fully cooked through.
  5. Remove the chicken from your pot and shred it with two forks, then return it to the pot.
  6. Add 1 cup of long-grain rice to your pot and stir it well, then simmer over medium heat for 15-20 minutes until your rice becomes tender.
  7. Pour in 1/4 cup of fresh lemon juice from about 2 lemons and add 1/4 cup of chopped fresh dill to your soup.
  8. Taste your soup and season it with salt and pepper as needed, then let it simmer for 2-3 minutes more on medium heat so the flavors blend together.
  9. Ladle your soup into bowls and top each serving with extra fresh dill before bringing it to your table.
