Instructions

  1. Whisk together 1/3 cup olive oil, 1/4 cup lemon juice, 4 minced garlic cloves, 1/2 cup grated parmesan cheese, 2 tbsp chopped fresh parsley, 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp Italian seasoning in a bowl until combined.
  2. Place your 1.5 lbs cubed chicken breasts or thighs into the marinade and stir so each piece gets coated evenly.
  3. Cover your bowl and refrigerate for at least 30 minutes or up to 4 hours, letting the flavors soak into the chicken.
  4. If you’re using wooden skewers, soak them in water for 15 minutes so they don’t char on the grill.
  5. Thread your marinated chicken pieces onto each skewer, leaving a small gap between pieces so heat circulates around them.
  6. Brush your grill grates with oil and heat to medium-high, then place your skewers on the grates and cook for 5 to 7 minutes on the first side until you see golden browning.
