Ingredients
Scale
Proteins and Vegetables:
- 6 bone-in chicken thighs
- 1.5 pounds baby potatoes, halved
- 5 cloves garlic, minced
Fats and Oils:
- 3 tablespoons olive oil
Seasonings and Cheese:
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Get your oven heating to 400°F and prepare a sheet pan by lining or greasing it lightly for your chicken and potatoes.
- Cut your 1.5 lbs of baby potatoes in half and transfer them to a large bowl along with your 6 bone-in chicken thighs.
- Pour 3 tbsp of olive oil over everything in the bowl and toss until each piece gets coated evenly.
- Add your 5 minced garlic cloves, 1/2 cup of grated Parmesan cheese, 1 tsp of Italian seasoning, and a pinch of salt and pepper to taste, then toss the mixture thoroughly.
- Spread your chicken and potatoes across the sheet pan in a single layer, positioning the chicken pieces skin side up so they brown beautifully.
- Roast everything for 35 to 40 minutes at 400°F until your chicken turns golden brown and your potatoes become fork-tender.
- Once the timer goes off, sprinkle the remaining 1/2 cup of Parmesan cheese over the top and return the pan to the oven for 5 additional minutes at 400°F.
- Remove the pan from the oven and scatter your 2 tbsp of fresh chopped parsley across the dish right before you serve it to your table.
Notes
- Keep your chicken skin side up throughout roasting so it gets crispy and golden instead of steaming in its own juices.
- Cut your potatoes into similar-sized pieces so they cook evenly with the chicken and finish at the same time.
- Don’t skip tossing everything together in the bowl first; coating the chicken and potatoes with oil and seasonings before the pan ensures even flavor throughout your dish.
- For a lighter version, use boneless, skinless chicken breasts instead of thighs, though you may need to reduce your roasting time by 10 minutes since they cook faster.
