Ingredients
Scale
Protein and Base:
- 4 boneless skinless chicken breasts
- 1 cup chicken broth
Cream and Cheese:
- 1 cup heavy cream
- 0.5 cup grated Parmesan cheese
- 2 tablespoons butter
Seasonings and Aromatics:
- 3 cloves garlic, minced
- salt and pepper, to taste
- 1 teaspoon dried oregano
- 0.5 teaspoon dried thyme
- 0.25 teaspoon red pepper flakes
- 0.5 cup chopped sun-dried tomatoes
- fresh basil or parsley, for garnish
Instructions
- Rub each of your 4 chicken breasts generously with salt and pepper on both sides.
- Combine 1 cup chicken broth, 1 cup heavy cream, 1/2 cup grated Parmesan cheese, 3 minced garlic cloves, 1 tsp dried oregano, 1/2 tsp dried thyme, and 1/4 tsp red pepper flakes in a bowl and whisk everything together.
- Lay your seasoned chicken breasts flat on the crockpot bottom.
- Pour your cream mixture directly over the chicken, making sure it covers everything evenly.
- Scatter 1/2 cup of drained sun-dried tomatoes across the top of the chicken.
- Cover your crockpot and cook on low for 4 hours until your chicken reaches full tenderness and an internal temperature of 165°F.
- Open your crockpot during the final 30 minutes and add 2 tbsp butter, stirring gently through the sauce to let it melt completely.
- Transfer your finished chicken to a serving dish.
- Sprinkle fresh basil or parsley over your chicken before bringing it to the table.
Notes
- Pound your chicken breasts to an even thickness so they cook uniformly and finish at the same time as each other.
- Don’t skip whisking the sauce ingredients together before adding them to the crockpot, as this helps the cream and broth blend smoothly without lumps.
- For a dairy-free version, swap the heavy cream with coconut milk and skip the butter, and the dish turns out just as creamy and satisfying.
- If your chicken finishes cooking early, switch to the warm setting to keep it tender without overcooking, since crockpots can vary in temperature.
