Instructions
- Place your 2 pounds of boneless, skinless chicken breasts into the crockpot.
- Pour the 24-ounce jar of spaghetti sauce and 1 cup of chicken broth directly over the chicken.
- Sprinkle 1 teaspoon of Italian seasoning across the top, then add salt and pepper to your taste.
- Cover and cook on low heat for 6 to 7 hours, or if you’re short on time, use high heat for 3 to 4 hours instead.
- Take the chicken out carefully and shred it with two forks right on your cutting board.
- Return your shredded chicken to the crockpot and give everything a good stir.
- Add your 8 ounces of uncooked spaghetti directly into the mixture and stir until the pasta is fully coated.
- Increase the heat to high and cook for 30 minutes, stirring occasionally so the spaghetti cooks evenly and becomes tender.
- Mix in your 1 cup of shredded mozzarella cheese and let it sit for a minute so it melts throughout the dish.
Notes
- Frozen chicken works fine in your crockpot, though thawed breasts cook more evenly and shred easier when it’s time to break them up.
- Breaking your spaghetti in half before adding it keeps the noodles from clumping together and helps them cook more consistently throughout the dish.
- Stir the spaghetti a couple of times during that final 30 minutes so the noodles don’t stick to the bottom and cook unevenly.
- For a lighter version, swap the regular spaghetti sauce for a lower-sodium variety and use chicken broth labeled as “reduced sodium” to control the salt in your finished dish.
