  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning

Instructions

  1. Place your 2 pounds of boneless, skinless chicken breasts into the crockpot.
  2. Pour the 24-ounce jar of spaghetti sauce and 1 cup of chicken broth directly over the chicken.
  3. Sprinkle 1 teaspoon of Italian seasoning across the top, then add salt and pepper to your taste.
  4. Cover and cook on low heat for 6 to 7 hours, or if you’re short on time, use high heat for 3 to 4 hours instead.
  5. Take the chicken out carefully and shred it with two forks right on your cutting board.
  6. Return your shredded chicken to the crockpot and give everything a good stir.
  7. Add your 8 ounces of uncooked spaghetti directly into the mixture and stir until the pasta is fully coated.
  8. Increase the heat to high and cook for 30 minutes, stirring occasionally so the spaghetti cooks evenly and becomes tender.
  9. Mix in your 1 cup of shredded mozzarella cheese and let it sit for a minute so it melts throughout the dish.

Notes

  • Frozen chicken works fine in your crockpot, though thawed breasts cook more evenly and shred easier when it’s time to break them up.
  • Breaking your spaghetti in half before adding it keeps the noodles from clumping together and helps them cook more consistently throughout the dish.
  • Stir the spaghetti a couple of times during that final 30 minutes so the noodles don’t stick to the bottom and cook unevenly.
  • For a lighter version, swap the regular spaghetti sauce for a lower-sodium variety and use chicken broth labeled as “reduced sodium” to control the salt in your finished dish.
