Ingredients
Scale
Base ingredients:
- 2 cups cooked wild rice
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables
Creamy components:
- 1 cup cream of chicken soup
- 1 cup sour cream
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
Seasonings:
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Heat your oven to 350°F before doing anything else.
- Grab a large mixing bowl and combine your 2 cups of cooked wild rice with 2 cups of shredded cooked chicken.
- Pour 1 cup of cream of chicken soup and 1 cup of sour cream into the bowl with your rice and chicken mixture.
- Add 1 cup of chicken broth to blend everything together smoothly.
- Toss in 1 cup of frozen mixed vegetables along with 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Stir everything until your ingredients are distributed evenly throughout.
- Spread your mixture into a greased 9×13 inch baking dish so it sits in an even layer.
- Scatter 1 cup of shredded cheddar cheese across the top of your casserole.
- Slide the dish into your 350°F oven and bake for 30 to 35 minutes until the edges bubble up and the cheese turns golden brown.
- Take the casserole out of the oven and let it rest for several minutes so the layers can set before you serve it to your table.
Notes
- Cook your wild rice completely before mixing it into the casserole, since it won’t soften much more during the 30-35 minute bake time.
- Shred rotisserie chicken from the store to save yourself time and effort, and it adds better flavor than plain cooked chicken.
- Stir the casserole halfway through baking to help the rice cook evenly and prevent it from drying out on the edges.
- For a lighter version, replace the sour cream with Greek yogurt and use cream of chicken soup made with less fat, and your casserole will still turn out creamy and satisfying.
