Description
Chicken spinach and mushroom low carb oven dish comes together when you layer tender chicken with wilted greens and earthy mushrooms in a creamy sauce that does all the work for you. Dinner is ready in under an hour, and you can adjust the seasonings to match what tastes good to your family.

Protein:
- 6 thin sliced chicken breasts
- 8 ounces shredded mozzarella cheese
Vegetables and Aromatics:
- 1 large package sliced mushrooms
- 1 small bag fresh baby spinach
- 1 container green onion cream cheese
Cooking Liquids and Seasonings:
- 1/4 cup olive oil
- 1/2 cup chicken broth
- Weber Herb and Garlic Seasoning (to taste)
- Pepper (to taste)
Instructions
- Set your oven to 375°F and coat a 9×13 inch baking dish with cooking spray so nothing sticks during baking.
- Arrange your 6 chicken breasts flat in a single layer across the bottom of the prepared dish.
- Scatter the entire small bag of fresh baby spinach and the large package of sliced mushrooms evenly over your chicken.
- Dust everything with Weber Herb and Garlic Seasoning to taste and finish with pepper to your preference at 375°F.
- Microwave 1 container of green onion cream cheese for about 30 seconds until it softens, then whisk in 1/4 cup olive oil and 1/2 cup chicken broth until the mixture flows smoothly.
- Pour your creamy sauce directly over the chicken, spinach, and mushrooms in the dish.
- Cover your dish loosely with foil and slide it into the 375°F oven for 20 minutes.
- Take off the foil and sprinkle 8 oz of shredded mozzarella cheese across the top at the 20 minute mark.
- Return your dish to the 375°F oven for another 10 minutes until the cheese turns melted and takes on a light golden color.
- Pull the dish from the oven and let it rest on your counter for 10 minutes so everything settles before you serve it.
Notes
- Pound your chicken breasts to an even thickness so they cook uniformly and don’t end up with dry edges while the centers are still undercooked.
- Squeeze excess moisture from your spinach before adding it to the dish, since watery spinach releases liquid during baking and makes the sauce diluted and thin.
- Softening the cream cheese in the microwave for just 20-30 seconds makes whisking in the oil and broth much easier without creating lumps.
- For a keto or stricter low-carb version, swap the mozzarella for full-fat cheddar or gruyere, which have slightly lower carbs and add richer flavor to the creamy sauce.
