Chicken and main protein:

Serving and garnish:

  • 1 package pita bread
  • 2 medium tomatoes
  • 1 medium onion
  • 1 head lettuce

Instructions

  1. Combine 1/4 cup olive oil, 2 tablespoons lemon juice, 2 minced garlic cloves, 1 teaspoon dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper in a bowl, whisking everything together until the mixture is smooth.
  2. Add your 1 lb of cubed chicken breast to the bowl and toss it thoroughly so each piece gets coated evenly with the marinade.
  3. Cover the bowl and refrigerate for at least 30 minutes so the chicken absorbs all those flavors.
  4. Heat your grill to medium-high heat, around 400°F, for about 5 minutes before cooking.
  5. Slide your marinated chicken pieces onto skewers, leaving a little space between each cube so heat circulates around them.
  6. Place the skewers directly on the grill grates and cook for 10 to 15 minutes at 400°F, rotating them every 3 to 4 minutes until the chicken is cooked through and has nice char marks.
  7. Transfer your cooked skewers to a serving plate and let them rest for 2 minutes.
  8. Warm your pita bread on the grill for about 1 minute per side so it softens slightly.
  9. Serve each skewer with warm pita bread alongside fresh tomatoes, onions, and lettuce for your guests to build their own wraps.

Notes

  • Marinating the chicken for at least 30 minutes lets the flavors soak in, but if time is short, even 15 minutes makes a difference.
  • Cut your chicken into evenly-sized pieces so everything cooks at the same rate and stays juicy.
