Instructions

  1. Heat your oven to 400°F and let it reach temperature while you prepare the potatoes.
  2. Rinse each of your 4 large russet potatoes under cold water, then use a fork to pierce the skin several times all over.
  3. Place the potatoes directly on your oven rack and bake for 45 to 60 minutes until a knife slides through the center easily.
  4. While the potatoes cook, combine your 2 cups of shredded cooked chicken with 1 cup of ranch dressing in a bowl, stirring until everything is evenly coated.
  5. Remove the potatoes from the oven when they’re soft, then split each one down the middle lengthwise.
  6. Use a fork to gently fluff the insides of your potatoes, breaking up the flesh without tearing the skin.
  7. Spoon the chicken and ranch mixture equally into each potato half.
  8. Distribute 1 cup of shredded cheddar cheese over the top of your filled potatoes.
