Instructions

  3. Place the pierced potatoes directly on the oven rack and bake for 45 minutes at 400°F until they yield easily when pressed.
  4. While your potatoes roast, combine 1 cup of shredded cooked chicken, 1 ripe diced avocado, 1/4 cup Greek yogurt, and 1 tablespoon of lime juice in a bowl.
  5. Season your chicken mixture generously with salt and pepper to taste.
