Instructions
- Coat your 2 boneless skinless chicken breasts with salt and pepper, then add 1 tablespoon olive oil to a skillet preheated to medium-high heat and cook them for 6 to 7 minutes on each side until they reach an internal temperature of 165 degrees Fahrenheit.
- Transfer your cooked chicken to a cutting board and let it rest for a couple of minutes before slicing it into thin pieces.
- While your chicken rests, slice 1 avocado, 1 small red onion, and 1 tomato into thin pieces, keeping each ingredient separate on your cutting board.
- Spread 1 tablespoon of mayonnaise on 2 slices of your bread and 1 tablespoon of Dijon mustard on the other 2 slices.
- Layer your sliced chicken, 2 slices of cheese (Swiss, cheddar, or provolone work well), the avocado slices, red onion, and tomato onto your mayonnaise-spread bread.
- Place your remaining bread slices on top with the mustard side facing down, pressing gently to hold everything together.
- Heat a skillet or grill pan to medium heat and add butter or olive oil, then place your assembled sandwiches in the pan and cook for 3 to 4 minutes per side until the bread turns golden and your cheese melts completely.
