Instructions
- Cut your 1 1/2 lbs of chicken breasts into 1/3-inch pieces for even cooking throughout the fritters.
- Whisk together 2 large eggs, 1/3 cup mayonnaise, 1/3 cup all-purpose flour, 4 oz shredded mozzarella cheese, 1 1/2 tablespoons fresh chopped dill, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a large bowl.
- Fold your diced chicken into the wet mixture until everything is evenly coated and combined.
- Cover the bowl and refrigerate your mixture for at least 2 hours at 40°F to help the flavors meld and make scooping easier.
- Set your non-stick pan on the stove and add 2 tablespoons olive oil, heating to medium temperature for about 2 minutes until the oil shimmers.
- Scoop heaping tablespoons of your chicken mixture onto the hot pan, gently pressing each fritter down with your spatula.
- Let your fritters cook for 3-4 minutes at medium heat until the bottoms turn golden brown and crispy.
- Flip each fritter carefully and cook the other side for another 3-4 minutes at medium heat until golden and cooked through.
- Combine 1/3 cup mayonnaise, 1 pressed garlic clove, 1/2 tablespoon lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl and stir until smooth if serving with aioli.
- Transfer your fritters to a serving plate while they’re still warm and pair them with the garlic aioli on the side.
