  • 2 slices of bread
  • 2 slices of cheese

Protein and flavor:

  • 1/2 cup cooked chicken
  • 2 tablespoons BBQ sauce

Cooking fat and toppings:

  • 1 tablespoon unsalted butter
  • 1/4 cup thinly sliced red onion

Instructions

  1. Toss your ½ cup shredded chicken with 2 tablespoons of BBQ sauce in a small bowl until the chicken is completely coated.
  2. Set your skillet to medium heat and let it warm up for about 2 minutes.
  3. Take your 2 slices of bread and spread 1 tablespoon of softened butter evenly across one side of each slice.
  4. Place the first bread slice butter-side down onto your hot skillet at medium heat.
  5. Layer 1 slice of cheese directly onto the bread in your skillet, then add your BBQ chicken mixture on top of that.
  6. Place the second slice of cheese over your chicken filling.
  7. Top everything with your second bread slice, positioned butter-side up.
  8. Let your sandwich cook for 3 to 4 minutes at medium heat, pressing down gently with a spatula so the cheese melts and the bottom gets golden and crispy.
  9. Flip your sandwich carefully and cook the other side for another 3 to 4 minutes at medium heat until it’s golden brown and the cheese inside is fully melted.
  10. Transfer your sandwich to a cutting board and slice it diagonally in half before serving it right away.
