  • 2 cups shredded cheddar cheese

  • 4 large flour tortillas
  • 1 tablespoon olive oil

Sauce:

  • 1 cup BBQ sauce

Instructions

  1. Combine your 2 cups of shredded cooked chicken with 1 cup of BBQ sauce in a bowl until everything is evenly coated.
  2. Pour 1 tablespoon of olive oil into a skillet and set the heat to medium for about 2 minutes until the oil shimmers.
  3. Lay one of your 4 large flour tortillas flat in the heated skillet.
  4. Spread 1/4 of your chicken-BBQ mixture across half of the tortilla, then top that same half with 1/2 cup of shredded cheddar cheese.
  5. Fold your tortilla in half over the filling and let it cook at medium heat for 3 to 4 minutes until the bottom turns golden brown.
  6. Flip the quesadilla over carefully and cook the other side at medium heat for another 3 to 4 minutes until it’s golden and your cheese has melted completely.
  7. Transfer the cooked quesadilla to a plate and repeat this process with your remaining 3 tortillas, 1/4 portions of the chicken mixture, and 1/2 cup portions of cheddar cheese each.
  8. Cut your finished quesadillas into triangles or wedges and serve them while they’re still warm.

Notes

  • Tossing your chicken with BBQ sauce ahead of time lets the flavors soak in, so your filling tastes better throughout the quesadilla.
  • Medium heat is key here because high heat will burn the tortilla before the cheese inside has time to melt completely.
