Description

  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Wet Ingredients:

  • 2 large eggs
  • 2 tablespoons olive oil spray

Protein and Serving:

  • 2 chicken breasts
  • 1 cup marinara sauce
  • fresh basil leaves

Instructions

  1. Heat your oven to 400°F and line a baking sheet with parchment paper.
  2. Cut your 2 chicken breasts (about 1 lb total) into bite-sized pieces and sprinkle them with salt and pepper to your taste.
  3. Crack 2 large eggs into one bowl and whisk them together.
  4. Mix 1 cup of Italian-style breadcrumbs, 1/2 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, and 1 teaspoon of Italian seasoning in a separate bowl.
  5. Take each chicken piece and dip it into your egg mixture, making sure it’s fully coated.
  6. Roll your egg-coated chicken pieces in the breadcrumb mixture until they’re completely covered.
  7. Arrange your coated pieces on the prepared baking sheet and spray the tops lightly with olive oil spray.
  8. Place the baking sheet in your 400°F oven for 12-13 minutes, then flip each piece over.
  9. Continue baking for another 12-13 minutes at 400°F until the coating turns golden and crispy.
  10. Remove your chicken bites from the oven and drizzle 1 cup of marinara sauce over them or serve it on the side for dipping.
  11. Garnish your finished dish with fresh basil leaves before serving.
