Instructions

  1. Heat your oven to 400°F and coat a large baking dish lightly with oil so nothing sticks during cooking.
  2. Toss 1.5 pounds of potatoes cut into 1-inch cubes with 1 tablespoon olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon dried thyme, salt, and pepper in a bowl.
  3. Spread your seasoned potatoes across one half of the baking dish in a single layer.
  4. Rub the remaining 1 tablespoon of olive oil onto each of your 4 chicken breasts.
  5. Coat both sides of the chicken with the remaining 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon dried thyme, salt, and pepper.
  6. Position your seasoned chicken breasts on the empty side of the dish next to the potatoes.
