Description

This alfredo chicken grilled cheese brings together creamy pasta sauce, tender chicken, and melted cheese between toasted bread that satisfies any craving for comfort food. Butter the outside of your bread, load it up with the good stuff inside, and cook it until golden so you get that perfect contrast between crispy exterior and gooey, delicious center.

  • 1 cup cooked chicken, shredded
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons butter

Sauces and condiments:

  • 1/2 cup Alfredo sauce

Bread:

  • 2 slices of bread

Instructions

  1. Set your skillet to medium heat and let it warm through for about 1 minute.
  2. Combine your 1 cup of shredded cooked chicken with 1/2 cup of Alfredo sauce in a bowl, stirring until the chicken is fully coated.
  3. Spread 1 tablespoon of butter on one side of each of your 2 bread slices.
  4. Place the first slice butter side down into your heated skillet and let it toast for 2 to 3 minutes at medium heat.
  5. Spoon the chicken and sauce mixture directly onto the toasted bread in your skillet.
  6. Distribute 1 cup of shredded mozzarella cheese evenly over your chicken layer.
  7. Place the second bread slice on top with the buttered side facing outward, then press down gently.
  8. Cook this side for 2 to 3 minutes at medium heat until it turns golden brown, then carefully flip the sandwich over.
  9. Toast the second side for another 2 to 3 minutes at medium heat until it reaches the same golden color and your cheese melts completely.
  10. Transfer your sandwich to a cutting board and allow it to rest for 1 minute before slicing diagonally and serving.

Notes

  • Make sure your chicken is shredded into small, bite-sized pieces so it distributes evenly throughout your sandwich and doesn’t create thick, clumpy pockets.
  • Butter the outside of both bread slices generously since that’s what creates the golden, crispy exterior you’re after, and don’t skip this step even though it seems simple.
  • Keep your skillet at medium heat rather than cranking it up, because high heat will burn the outside of your bread before the cheese melts inside.
  • If you’re cooking for a dairy-free diet, swap regular butter for vegan butter and use a dairy-free mozzarella, though dairy-free cheese may not melt quite as smoothly as the traditional version.
