The flagship of the Kabuki group and the place where Ricardo Sanz has been officiating since 2007. On arriving at this hotel - of the same name - he considered he could finally carry out the "growing up" of Kabuki as he had dreamed it. It was a decade during which daily improvement was the team's leitmotiv. 

Thanks to the expertise acquired in the other two restaurants, here the finishing touches to the Kabuki style were fully defined; the way of doing things so the client becomes the centre of the gastronomic experience. This is where full honours are paid to what the Group considers to be a haute cuisine restaurant: a place where the cooking, dining room and sommelier are all equally placed at the service of the diners so they can live an unforgettable experience.

Firstly, it is a sushi bar, where the executive chef and creator of the Kabuki Cuisine concept, Ricardo Sanz, can be watched working. In addition, the dining room, overseen by the indispensable Paco Cantos, is where impressive lists of wine, sake, tea or beer can be enjoyed under the close eye of the sommelier Miguel Ángel Millán.

As always, the human capital has been key. As Ricardo Sanz said many years ago and still maintains “neither this company nor myself could have got where we are, without having, as they say these days, great "human capital". People, professionals who have helped us move forwards on a daily basis, who we are very grateful to. Kabuki is, has been and will always be working as a team”. 

Both Kabuki Wellington and its kitchen and waiting staff have received since its opening many awards, such as one Michelin star and three Repsol Soles.
